Tomato Pickle - Thakkali Thokku
The Tomato Pickle Recipe is a simple and easy to make pickle that is delicious. Also known as Thakkali Thokku , this pickles makes a perfect spread over a bread or served along with idly, dosa, roti, adai, upma, pongal, pakoras, vada, kuzhi paniyaram, sandwiches. It can be even had along with steamed rice and ghee.

Ingredients
1 kg ripe red tomatoes, roughly chopped
2 green chillies
1 small marble sized tamarind
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon fenugreek seeds
5 to 6 curry leaves
2 teaspoons red chilli powder
1/2 teaspoon asafoetida
2 tablespoons sesame oil
salt to taste
Method Of Tomato Pickle - Thakkali Thokku
Add the tomatoes, green chillies and the tamarind in a blender and make it into a fine paste.Heat oil in a heavy bottomed pan at medium heat; add the mustard seeds. When it starts to crackle, add the cumin seeds, fenugreek seeds, asafoetida and the curry leaves; sauté for a few secondsPour the ground paste into the pan, turn the heat to low and cover the pan. Simmer the mixture for about 10-15 minutes with occasional stirring.After about 15 minutes, the puree would be bubbling and the rawness from the tomatoes would be gone. Add the chilli powder, required amount of salt. Uncover the pan; allow it to simmer until all the water evaporates and the oil starts oozing out the mixture has attained a thick consistency. Once the mixture has attained a thick consistency like a spread, turn off the heat.Transfer to a pickle glass jar and keep airtight and refrigerated for a few days. Serve this spicy tomato pickle as a spread or an accompaniment.
